Florida Tomato-Basil Relish

Yields: 8 servings


4 tablespoons olive oil
3/4 pound Florida tomatoes, seeded and roughly chopped
6 large garlic cloves, minced
1/4 cup fresh Florida basil, chopped
1 tablespoon red wine vinegar


Heat oil in large skillet over medium-high heat. Add tomatoes and garlic. Sauté until tomatoes soften, about 5 minutes. Add Basil and vinegar. Season with salt and pepper. Serve at room temperature.
